BEEF - BUDGET BBQ RECIPE

If you've never tried BRISKET OF BEEF cooked this way, then you are missing out! Who would have thought this budget cut of meat could taste THIS good? It's now one of our firm favourites and we love to slow cook this while we are doing other things.
Brisket of beef is commonly used to make pastrami and here in the UK it's generally used for cheap pot roasts. Don't confuse cheap with tasteless - we believe this cut of meat is one of the most flavoursome you will find, and has its own distinct taste.
If the weather had been half decent we could have cooked this on the BBQ for the remaining half hour. Cook more than you need and use in sandwiches.
BBQ BRISKET OF BEEF
Ingredients (serves 4-6)
1.25 kg brisket of beef
Then one teaspoon of each:
smoked paprika
ordinary paprika
cumin
dried thyme
salt and pepper
potatoes (if using)
chopped onions for the base of the oven dish
****
Begin by dry rubbing the brisket with the spices. Do this the night before if you have time, and unroll the brisket. In the UK we often find the brisket of beef rolled and ready for pot roasting. It's a budget cut of meat and well worth seeking out. Slow cooking will produce a succulent, juicy piece of melt in the mouth beef. Depending upon the amount of fat that comes with the joint, will depend on how much you need. We estimate around 200g per person.
Place the (unrolled) brisket on a bed of chopped onions and pour in a small cup of water. Cover in foil and place in the oven.
Cook for around 3.5 hours at 140ºC. Remove foil and turn the oven up to around 180ºC. Take the onions out and set them aside and put potatoes (if using) into the roasting pan. Cook the meat for a little longer then remove from the oven. Let the meat rest while the potatoes continue to cook until nice and crisp.
We served ours with sweetcorn and a salad. You may like to have it with something else - like beans and coleslaw.

We began our weight loss journey in January 2011 - and began our blog in June 2011. Here's a link to the first post. (here's the link).
We like to post our main meals to show you what CAN be eaten. You won’t find us posting every last morsel though – but we hope this gives you an idea of how far calories can go! I'm currently going through the photographs and replacing them with more website friendly versions which will allow the blog to load quickly.
