Spicy warm chicken salad

Spicy warm chicken noodle salad - a meal in under 30 minutes. Bursting with fresh and tangy spice. Under 400 calories.
If you're not sure whether you fancy a salad or a hot meal, this is a great way to satisfy both. It's wonderful on a hot day and doesn't quite feel like a salad on a cool day.
There is only one ingredient that needs cooking ahead, and that's the noodles. Cook then cool and marinate in the spices.
What's more you can double up the portions and put some in the lunchbox. Very versatile. Here's the recipe:

Spicy warm chicken salad
Ingredients (serves two)
300g chicken breast
50g rice noodles - the thin ones work well
half a red pepper
a handful of mange tout
half a carrot (optional)
cucumber - cut into batons
2 spring onions
2 radishes
 salad leaves - try Chinese lettuce with its peppery taste and extra crunch
Dressing
1 tablespoon of oil (we used sesame but use whatever you have)
teaspoon of honey
juice of half a lime (you could add some zest too if you wish)
coriander - I used a good sprinkle of dried as I had no fresh
half a red chilli - deseeded and chopped
salt (or a drop of fish sauce)
Finishing touch
sprinkle of toasted sesame seeds

Cook the rice noodles and allow to cool. We covered ours with hot water for 5 minutes, placed in cold water then drain and leave to cool. Alternatively, buy ready prepared noodles. 

Mix the dressing ingredients together then pour half over the uncooked chicken. Leave to marinate if you have time (I left mine in the fridge overnight).

Fry the chicken in a little oil until cooked through. 

Slice the lettuce leaves, spring onions, cucumber, avocado and radish. Grate the carrot. Place these into a separate bowl.

 Pour over the rest of the dressing. Add the noodles. Give everything a good stir.

Cook the mange tout for a couple of minutes, drain and run under cold water.

Place the vegetables and salad/noodles onto a plate and top with the chicken.

Finish with a good sprinkle of lightly toasted sesame seeds - these really give the dish a fabulous texture.
