Simply scrub a few large potatoes, prick them all over and place in a microwave oven for 5 to 6 minutes.
Remove, then cut into wedges. Sprinkle with
your favourite spices - we chose peri-peri - or just salt and pepper. Place on a hot, oiled oven tray. Spray with oil and place in a very hot oven - 200ºC for 8-10 minutes. Turn them over at half time.
All the goodness of the potato and healthier than deep fried chips. They turn out well if you have a potato that's not too waxy - something like a Maris Piper or Estima should do the trick. Here's how ours turned out last night.
