It's usually the little bits on the side that make a great barbeque.
1) This easy GUACAMOLE was so refreshing and made good use of my over ripe avocado.
GUACAMOLE Ingredients: Blend one avocado, juice of half a lime, half a small red chilli and a little red onion. Season with salt and pepper and add a little olive oil to loosen the mixture. Love that hint of spice!
2) Or what about this cooling RAITA?
125g full fat greek yoghurt, 5cm piece of cucumber (peeled), salt/pepper, handful of chopped mint, teaspoon of cumin seeds.
Remove the seeds from the cucumber and finely dice the flesh. Place on a kitchen towel then give it a gentle squeeze to extract a little of the moisture. Mix the cucumber and chopped mint into the yoghurt.
Season with salt and pepper. DRY fry the cumin seeds for a minute or so to release their aroma. Allow to cool then add to the raita.
Ingredients: One tsp smoked paprika , one tsp cumin, 2 small cloves garlic, 2 teaspoons soy sauce, a glug of tomato ketchup, 10-15ml honey, half teaspoon of black pepper & salt, one onion.
4) And one last very easy tip for a really refreshing SALSA - using the following ingredients: one large tomato, lime juice, chilli and coriander. Chop the tomato, coriander and chilli then mix together with the lime juice. Great on top of your burgers.
